Hi Chuck, Let me see if I can condense Ron's ideas from the couple of times I have seen him post to this question.
1.8 on your lines, 2.8 stacked on top. This allows you to physically see both kites at all times, so you as the flyer can appreciate the stack as much as the people watching you fly.

If your getting the most recent versions of the kites - stack as is. Early versions of the 1.8 needed a small fix kit. Keep in mind that stacking will slow the kites a bit, and make them a little slower in turning. If you're after fast n furious fun... one 1.8 is the quickest. Stacking two 1.8's or 2 2.8's is a nice display if you wanna give others something nice to enjoy... but the pilot can't really enjoy the visuals of a stack. Unless you put a 1.8 under a 2.8. (what I like to do). Again, it will be slower, but will give more pull and the two sizes fly more stable than a matched pair. We liked the 2.8 and 1.8 under because the pilot could see both kites!. Gives a good bit of pull, sand skiing is pretty easy with a 1.8/2.8 stack.
